Freezer Cooking – 12 recipes, 24 bags, 48 meals

Saturday was another big freezer prep day at my house. I decided to tackle a bunch of new recipes this time, which is retrospect, was not one of my brighter ideas. I should have stuck with the stuff I was feeling comfortable with and work in 1-2 new recipes each time, instead of doing half all new stuff. I ended up really frazzled this time, partly due to not knowing the recipes, partly because my kid is teething and didn’t want to hang out with daddy while I cooked and partly due to general lack of focus. Oh and my can opener broke. But with a little help from my husband and my friend S, who came by in the afternoon, I got it done.

Here are the new recipes I tried this month. Each of these makes one freezer bag meal (which for my husband and I is dinner and leftovers for lunch the next day). I double all the recipes so that I get two bags of each meal through the month.

Moroccan Lentil Stew:
-1 cup dried lentils
-1 can chickpeas, drained & rinsed
-1 can other beans, drained & rinsed
-1 onion, chopped
-2 cups baby carrots
-1 can diced tomatoes, with juice
-4 cups vegetable broth
-2 tsp minced garlic
-2 tsp minced ginger
-1.5 tsp garam masala
-0.5 tsp cayenne pepper
-0.5 tsp cumin
-0.25 tsp nutmeg
-0.25 tsp cinnamon
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Cook LOW 8 hours.

Legume Spinach Stew:
-1 can chickpeas, drained & rinsed
-1 can other beans, drained & rinsed
-1 onion, diced
-2 sweet potatoes, chopped
-1 package of frozen spinach
-2 tsp minced garlic
-2 tblsps lemon juice
-0.25 cup honey
-2 tsp cumin
-0.5 tsp coriander
-0.5 tsp pepper
-2 tblsps cream cheese (optional, serving day)
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Add cream cheese (optional).
Cook LOW 6 hours or HIGH 3 hours.

Hearty Beef Stew:
-1lb beef stewing cubes
-2 cups baby carrots
-3 red potatoes, chopped
-2 cups of frozen peas
-1 can cream of mushroom soup
-1 can tomato sauce
-1 package of dry onion soup mix
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Cook LOW 8 hours or HIGH 4 hours.

Black Bean Taco Soup:
-1lb lean ground beef or turkey
-1 onion, chopped
-2 cups of frozen corn
-1 can black beans, drained & rinsed
-1 can diced tomatoes, with juice
-1 can tomato sauce
-1 package of taco seasoning
Brown meat and onion, drain, let cool for a minute then add to freezer bag.
Place all other ingredients in freezer bag. Freeze flat.
Thaw. Dump in crockpot.
Cook LOW 2-3.5 hours or HIGH 1-2 hours.

Chicken Broccoli Alfredo:
-2 chicken breasts
-1 green pepper, chopped
-1 can of sliced mushrooms, drained
-2 cups of frozen brocoli
-1 jar of alfredo sauce
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Cook LOW 6 hours.

Cilantro Lime Chicken with Corn and Black Beans:
-2 chicken breasts
-1 bunch of fresh cilnatro, chopped
-0.5 red onion, chopped
-1 can of black beans, drained & rinsed
-2 cups of frozen corn
-2 tsp minced garlic
-2 tblsps lime juice
-1 tsp cumin
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Cook LOW 8 hours or HIGH 4 hours.

Curry Chicken:
-2 chicken breasts
-2 sweet potatoes, chopped
-2 cups of baby carrots
-1 onion, chopped
-1 zucchini, chopped ((mine bags are missing the zucchini as I didn’t buy enough))
-2 cans of chopped mango ((or in my case, chopped pineapple because I couldn’t find mango anywhere)
-1.5 tblsps flour
-2 tblsps curry powder
-2 tsp cumin
-2 tsp minced garlic
-1 cup chicken stock
-0.5 cup raisins (serving day)
-0.5 cups peanuts or cashews (serving day)
Place all ingredients in freezer bag. Freeze flat.
Thaw, dump in crockpot.
Cook LOW 8 hours or HIGH 4 hours.

From the previous recipes, I also made Cranberry Chicken, Apple Cherry Pork, Pork Ratatouille, Butter Chickpeas, and Goulash. As I cook up the new recipes, I’ll post updates on how they turned out. Tomorrow is going to be Black Bean Taco Soup!

    I really need to get in the habit of doing this. I do try to do as much as I can to make food ahead of time and keep the freezer stocked but it often gets low and that is when I either increase unhealthy options or eat out a few extra times during the month.

    I have a question. So, do you put the canned sauces in the freezer bag as well or do you add them when you cook the recipe? For example, the mushroom soup and tomato sauce in the beef stew…you freeze those two ingredients with all other ingredients??? Thanks!

      Yes, I do. The only thing I wouldn’t add is broth (having learned the hard way that that didn’t really work so well). The chicken and mushrooms one I rarely freeze as it’s so easy to throw together in the morning (only 4 ingredients) and I prefer the way the sauce comes out if it’s fresh. Mushroom soup doesn’t freeze as well as some of the other stuff. But all the tomato pastes, sauces, yup, go in the freezer.

    How many people do these recipes serve? I love the sound of them but think I might need to 1/2 some for our empty nest. ..

      Usually we do them for my husband and I for dinner (and the 4yr old but most of them she only eats a tiny bit of) and we have at least one set of leftovers for lunches. Sometimes a bit more leftovers depending on the recipe but I don’t like cooking so leftovers are good for me.

    So how did the recipes turn out? Did you like them? I have only tried once to do a bunch of new crockpot recipes someone mentioned on the internet and unfortunately they were horrible. So my crockpot and I have parted ways but I don’t mind slow cooking in the oven.

    I have a family of 10 all together. Should i just increase the meat portions and just eyeball all the vegies, or am I Gonna have to change the whole recipe?

      Depending on the receipe, I would probably just double it. Most of these will do 4-6 large servings.
